Cinnamon Apple Mini Quickbreads

These mini quickbreads pair cinnamon and apple for a moist and sweet bread that is perfect for giving out to friends and family.


  • 2 apples cored peeled and finely chopped
  • 1/4 c. granulated sugar
  • 2 c. all-purpose flour
  • 1 c. whole wheat flour
  • 1/2 c. rolled quick oats
  • 1/2 c. milled flax seed
  • 1 c. brown sugar packed
  • 1 tbsp. ground cinnamon
  • 4 tsp. Clabber Girl Baking Powder
  • 1/2 tsp. salt
  • 1/2 c. vegetable oil
  • 3 lg. eggs beaten
  • 1 c. milk
  • 1/2 c. brown sugar packed
  • 1 tsp. ground cinnamon


Preheat oven to 400 F and spray mini bread pans with cooking spray. (About 12 to 15)

In a small bowl, toss 1/4 cup granulated sugar and chopped apples together. Set aside and mix other ingredients in a large bowl. Combine flours, oats, flax seed, brown sugar, cinnamon, baking powder and salt. Stir well until all is combined. Add oil, eggs and milk; stir until mixed well and then add apples and sugar. In a separate bowl, combine topping ingredients.

Spoon batter into prepared pans and sprinkle topping on the tops of each mini loaf. Bake on center rack for 25 to 30 minutes or until tops spring back when touched lightly. Allow to cool for 5 minutes before removing from pans, and continue cooling on wire rack.
