Lemon Custard

This lemon custard is very simple to make and quite tasty. You can garnish with whipped cream, strawberries, lemon wedges and mint leaves.


  • 2 tbsp. Clabber Girl Cornstarch
  • 1/2 c. water
  • 2/3 c. granulated sugar
  • 2 tbsp. lemon zest
  • 1/2 c. lemon juice
  • 2 egg yolk
  • 1 c. whipping cream prepared
  • whipped topping
  • mixed berries for topping


In a saucepan on the stove, whisk cornstarch and water until dissolved. Add sugar, lemon zest, juice and egg yolks. Over medium heat, stirring constantly, cook until mixture comes to a rolling boil. Remove from heat and pour into large bowl and cover with plastic wrap; chill for 2 hours.

With an electric mixer or whisk add prepared whipped cream. Scoop into individual serving dishes and top with whipped cream, berries, lemon wedges and mint leaves.
