Cranberry Orange Nut Bread

This quick bread features a nice combination of orange and cranberry and is perfect for breakfast or a snack.


  • 2 c. flour
  • 1 c. sugar
  • 1 1/2 tsp. Clabber Girl Baking Powder
  • 1 tsp. salt
  • 1/2 tsp. Clabber Girl Baking Soda
  • 1/4 c. shortening
  • 1 egg beaten
  • 3/4 c. orange juice
  • 1 tbsp. orange zest
  • 1 c. cranberries coarsely chopped
  • 1/4 c. walnuts chopped
  • 1 tbsp. all-purpose flour


Preheat oven to 350 degrees F. Grease and flour an 8x4-inch loaf pan.

In medium bowl, mix together flour, sugar, Clabber Girl Baking Powder, salt, and Clabber Girl Baking Soda.

In a small bowl beat together shortening, egg, juice, and the orange peel.

Add liquid ingredients to dry ingredients, mixing well. Gently stir in cranberries and walnuts. Pour into prepared pan. Bake 40 to 45 minutes or until toothpick inserted into center comes out clean.

Cool in pan 10 minutes; remove to wire rack and cool before serving.
