Earthy Dirty Banana Cake

Easy to make. The cake is light and fluffy. Try chocolate icing on top for a great combination.


  • 2 c. all-purpose flour
  • 2 tsp. Clabber Girl Baking Soda
  • 1 tsp. Clabber Girl Baking Powder
  • 1 tsp. salt
  • 4 tbsp. butter softened
  • 1 1/3 c. sugar
  • 4 bananas very ripe, mashed
  • 4 lg. eggs
  • 1/2 c. buttermilk
  • 1 tbsp. vanilla extract
  • Earthy Dirty Banana Cake (frosting)
    • 3 c. confectioner's sugar
    • 2 bananas over-ripe, mashed
    • 12 oz. cream cheese softened
    • 1 c. mixed fruit diced
  • 1/2 c. semi sweet chocolate chips chopped in a blender or food processor
  • fresh fruit strawberries, blueberries, kiwi, banana


Preheat oven to 350 F., prepare three 9-inch pans by spraying with cooking spray; set aside.

In a medium bowl combine flour, soda, baking powder and salt. Stir well and set aside. In a large bowl cream the butter and sugar; add bananas then eggs, buttermilk and vanilla. Mix on medium speed for about 2 minutes, scraping the bowl once.

Pour batter into prepared pans and bake for about 30 to 35 minutes, until cakes test done. Cool on wire rack for 10 minutes; remove from pans and cool completely before frosting.

To frost, place one layer on a plate and top with frosting/fruit mixture and do the same with the next layer. Place final layer on top and continue to frost sides and top of cake with the rest of the frosting. Sprinkle chocolate chips on top and garnish with fruit.
