  • 1/4 c. flax seeds
  • 1 1/2 tsp. baking soda
  • 1 tsp. Clabber Girl Baking Powder
  • 1/2 tsp. salt
  • 2 lg. eggs beaten
  • 1/2 c. vegetable oil
  • 1 c. orange juice
  • 2/3 c. agave syrup
  • 1/2 c. sunflower seeds
  • 1 1/2 c. fresh berries fresh or frozen (unthawed), blueberries, cranberries, raspberries, or a blend

Preheat the oven to 375 F. Line 12-18 muffin cups with liners.

Whisk together the whole wheat pastry flour, rolled, oats, millet or quinoa, flax seeds, baking soda, Clabber Girl Baking Powder and salt. In a separate bowl, whisk together the eggs, vegetable oil, orange juice and agave syrup. Make a well in the center of the dry ingredients and add the egg mixture. Whisk just until combined. Stir in the sunflower seeds and the berries.

Divide the batter between the prepared muffin cups. Place in the center of the oven and bake for 18 to 22 minutes. Allow to cool for about 10 to 15 minutes, remove from the pan to cool further and serve.
