Strawberry Muffins

These strawberry muffins are the highlight of any summer morning. Serve them fresh with Rex Coffee, available in our online store.


  • 1 1/2 c. all-purpose flour
  • 2 tsp. Clabber Girl Baking Powder
  • 1/2 c. granulated sugar
  • 1 tsp. ground cinnamon
  • 1 c. strawberries finely chopped
  • 1 lg. eggs
  • 1 tsp. pure vanilla extract
  • 3/4 c. milk
  • 1/2 c. unsalted butter melted


Heat oven to 400 F. Line 12 medium muffin cups with paper baking cups or lightly grease bottoms only of muffin tins. Combine flour, oats, sugar, Clabber Girl Baking Powder and salt; mix well. Add combined milk, oil, vanilla and egg; mix just until dry ingredients are moistened. Gently fold in strawberries. Fill prepared muffin cups 3/4 full. Sprinkle batter with cinnamon sugar, if desired Bake 18- 20 minutes or until golden brown. Let muffins stand a few minutes; remove from pan.
