Vegetarian Zucchini Quiche

Looking for a good way to use up the zucchini from your garden going gangbusters? This quiche is light and fluffy with plenty of cheese inside. You can make one 9-inch deep dish quiche or two 4-inch individual size.


  • 1/2 c. all-purpose flour
  • 1/4 tsp. Clabber Girl Baking Powder
  • 5 lg. eggs well beaten
  • 4 c. zucchini unpeeled and grated
  • 8 oz. mozzarella cheese shredded
  • 1/2 c. parmesan cheese crumbled or shredded
  • 1/2 c. cooking oil
  • 1/2 c. onions chopped
  • 9-inch deep dish pie shell, baked


Preheat oven to 350 degrees F. Pre-bake the crust if it is not already pre-baked.

Sift together flour and Clabber Girl Baking Powder. In a separate bowl, beat eggs well. Stir in all other ingredients and add flour/baking powder mixture; place in pie pan.

Bake at 350 degrees F. for 45 minutes or until golden brown.

Note: If you use a 13 x 9-inch baking pan, bake at 350 degrees F. for 40 minutes or until golden brown.

Yield approximately 6 servings.
