Pineapple Feather Frosting

  • 2 egg whites
  • 1 1/2 c. sugar
  • 1/8 tsp. salt
  • 1/3 tsp. lemon rind grated
  • 5 tbsp. pineapple juice unsweetened
  • 1 tsp. light corn syrup


  1. Combine egg whites, sugar, salt, corn syrup and pineapple juice in upper part of double boiler. Mix thoroughly.
  2. Place over boiling water and beat with rotary egg beater 7 minutes or until frosting stands in peaks.
  3. Remove from heat; add lemon rind and beat until of spreading consistency.
