Mascarpone cream is filling and rich, made from Italian cream cheese and sweetened with agave syrup. You may also substitute local honey for the agave syrup, using a 1 to 1 ratio.

Place the Mascarpone in a small bowl, whisk in the fruit juice concentrate and lemon juice. Refrigerate the glaze until ready to use. If the lemon juice separates from the cheese, simply whisk it back in and refrigerate a little longer.
