This whole wheat baking mix can be used in place of regular baking mix. It features Clabber Girl Baking Powder and can even be kept outside the refrigerator if you use a non-refrigerated shortening. This makes 8 cups of mix.

  • 2 cups all-purpose flour
  • 2 cups whole wheat flour
  • 3/4 cup dry milk powder non-fat
  • 1/2 cup rolled oats quick-cooking
  • 3 tbsp Clabber Girl Baking Powder
  • 1/2 cup yellow corn meal
  • 1 tsp salt
  • 1 cup shortening

In a large bowl combine all-purpose flour, whole wheat flour, milk powder, oats, cornmeal, Clabber Girl Baking Powder, and salt. Using a pastry blender, cut in shortening until the mixture resembles coarse crumbs.

To use, spoon mixture lightly into a measuring cup level off with a spatula. If you freeze the mixture to store, bring mix to room temperature prior to utilizing.
