Applesauce Date Muffins

Fresh dates start to become available right during apple season in early autumn. These muffins are very moist and perfect for crisp fall mornings and breakfast on the go.


  • 1-1/2 c. flour sifted
  • 3 tsp. Rumford Baking Powder
  • 3 Tbsp. sugar
  • 1/2 tsp. salt
  • 1/2 c. dates chopped
  • 2 lg. eggs beaten
  • 2/3 c. milk
  • 1/2 c. applesauce
  • 3 Tbsp. butter melted


Preheat oven to 400 degrees F. Lightly grease or use cupcake paper liners a muffin pan.

Sift flour, Rumford Baking Powder, sugar and salt together. Stir chopped dates into dry ingredients. Combine eggs, milk, apple sauce and butter together. Add to dry ingredients, stirring only until moistened.

Use a tablespoon to dip batter into prepared muffin pans, and fill 2/3 full. Bake in preheated ovenfor 20 minutes.
