This whole wheat banana bread is very tasty and moist. Make sure you use buttermilk instead of regular milk as it will help to balance out the whole wheat flavor.

  • 1 c. bananas ripe, mashed
  • 3/4 c. sugar
  • 1/3 c. applesauce unsweetened
  • 1 tsp. vanilla extract
  • 2 lg. eggs
  • 1/4 c. quick cooking rolled oats
  • 1 tsp. Clabber Girl Baking Soda
  • 1 tsp. Clabber Girl Baking Powder
  • 2 c. whole wheat flour
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/4 tsp. cardamom
  • 3/4 c. buttermilk
  • Banana Wheat Bread (topping)
    • 1/3 cup chopped pecans
    • 2 tbsp brown sugar
    • 2 tbsp quick cooking rolled oats
    • 1/2 tsp cinnamon
    • 1/4 tsp nutmeg

Preheat oven to 350 degrees F. Coat a 9x4x2-inch loaf pan and set aside.

In a large mixing bowl, combine banana, sugar and applesauce. Add vanilla and eggs, mixing well. In a separate bowl combine dry ingredients and add to banana mixture alternately with buttermilk. Pour into prepared loaf pan.

In a small bowl, combine topping ingredients; sprinkle over top.

Bake in preheated oven for one hour. Cool in pan for 10 minutes, then place on wire rack to cool completely.
