Butterscotch Nut Frosting

You'll want to use a candy thermometer to make this frosting.


  • 1 c. light brown sugar
  • 1/3 c. granulated sugar
  • 1/3 c. hot water
  • 1 egg whites
  • 1/8 tsp. salt
  • 1/2 tsp. vanilla
  • 1/8 tsp. cream of tartar
  • 1/2 c. chopped nut meats


Put sugar and water in saucepan over low heat and stir until sugar dissolved. Boil until syrup spins a thread (238° F).

Pour over egg white, beaten with cream of tartar, beating constantly until icing stands in peaks. Add salt and vanilla, fold in chopped nuts.
