Cake flour will give these biscuits a cake-like texture, very unique and light. These aren't your traditional flakey biscuits, they are much more complex and very tasty! You can top with butter and jelly, apple butter is especially good on these.
Preheat oven to 450 degrees F.
In a large bowl combine flour, Clabber Girl Baking Powder and salt; mixing well. Cut in shortening using a pastry blender or two forks until mixture is crumbly. Stir in buttermilk. Mix just until dough comes away from the sides of the bowl. Turn dough out onto a floured surface. Knead 2-3 times. Pat or roll dough to a 1-inch thickness. Using a sharp 2-inch biscuit cutter, cut out biscuits and place on a un-greased baking sheet. Bake 8-10 minutes or until golden brown. Serve hot with butter and jelly.
