This is an easy soda bread made with buttermilk and Rumford Baking Powder. It is best if you allow the loaves to cool completely, then wrap in aluminum foil overnight, to serve the following day.

  • 4 1/2 c. all-purpose flour
  • 2/3 c. sugar
  • 4 1/2 tsp. Rumford Baking Powder
  • 1 1/2 tsp. Clabber Girl Baking Soda
  • 1 1/2 tsp. salt
  • 3 c. buttermilk
  • 3 eggs
  • 4 1/2 Tbsp. butter melted

Heat oven to 350 degrees F. Lightly grease two 8 1/2 x 4 1/2 inch loaf pans.

Combine flour, sugar, Rumford Baking Powder, soda and salt in a large bowl; mix well. Make a well in center of mixture.

In a separate bowl, combine buttermilk, egg and butter. Whisk wet ingredients into dry ingredients mixing just until thoroughly blended (batter will be almost smooth). Pour batter into prepared pans.

Bake 45 minutes. Rotate pans in oven and shield with foil. Bake an additional 30- 35 minutes or until long wooden pick inserted in the center comes out clean. Cool in pans on wire rack 10 minutes. Using a knife carefully run blade along edges of pan to loosen bread. Remove bread to wire rack, and cool completely.
