Banana Blueberry Loaf

Tired of plain banana bread? Turn it into a summertime favorite by adding blueberries to the mix! This blueberry banana bread is perfect for summer breakfast. When you add the blueberries, fold them in as gently as possible so they don't break and turn the batter completely blue.


  • 1 c. sugar
  • 1/2 c. oil
  • 1 c. bananas ripe, mashed
  • 1/2 c. yogurt low fat plain
  • 1 tsp. vanilla extract
  • 2 lg. eggs
  • 2 c. all-purpose flour
  • 1 tsp. Clabber Girl Baking Soda
  • 1/2 tsp. Clabber Girl Baking Powder
  • 1 c. blueberries fresh or frozen (do not thaw)


Preheat oven to 350 degrees F. Grease and flour a large loaf pan (9x5-inch). 

In a large bowl, combine sugar and oil; beat well. Add bananas, yogurt, vanilla, and eggs; blend well. Add flour, Clabber Girl Baking Soda, salt, and Clabber Girl Baking Powder; stir until ingredients are just moistened. Gently stir in blueberries. Pour into greased and floured loaf pan.

Bake in preheated oven for 40-50 minutes or until toothpick inserted in center comes out clean. Cool for 5 minutes then flip onto cooling rack.
