Shrimp Shortcake Biscuits

  • 1 cup all-purpose flour sifted
  • 1 1/2 tsp Rumford Baking Powder
  • 1/2 tsp salt
  • 3 tbsp shortening
  • 1 7/8 cups milk
  • 4 tbsp butter
  • 4 tbsp all-purpose flour
  • 1/2 tsp salt
  • 1 cup shrimp, peeled cooked and cleaned


Melt butter, add salt and flour then blend until smooth. Add milk and continue stirring until slightly thickened. Add the shrimp and heat thoroughly. Can be kept hot in upper part of double boiler.

Use 1/2 Basic Rumford Baking Powder Biscuit recipe (below). While hot, split and fill and top with shrimp mixture. Sprinkle with freshly grated cheese and garnish with watercress and ripe olives.
