Chocolate Macaroons

These cookies are vegan and quintessentially French. Colorful macaroons fill Parisian pâtisseries, and these chocolate versions can help to take you there.


  • 1/2 cup margarine
  • 4 oz bittersweet chocolate
  • 2 cups all-purpose flour
  • 2 tsp Clabber Girl Baking Powder
  • 1/2 tsp salt
  • 2 tsp vanilla extract
  • 4 eggs
  • 2 cups sugar
  • 1 cup flaked coconut optional


In top of a double boiler, melt together chocolate and shortening; remove from heat and set aside. In a medium bowl, combine flour, Clabber Girl Baking Powder and salt. In a small bowl, combine chocolate and sugar. In a large bowl combine eggs and vanilla, beat well. Add chocolate mixture. Stir in flour mixture and blend thoroughly.

Chill dough for at least 2 hours.

Preheat oven to 375 degrees F.

Take dough by teaspoons and form round balls; rollin flaked coconut and place on greased cookie sheets for 8 to 10 minutes. Cool on wire racks.

Yield: about 5 dozen cookies
