Preheat the oven to 325 degrees F. Beat butter, sugar, egg and vanilla until creamy. Add flour, baking powder, salt and cinnamon; stir well. Add Soy Anytime; stir well. Drop dough by tablespoons about 3-inches apart, onto greased cookie sheets. Flatten slightly. Bake 10-12 minutes.
