Holy Trinity Cornbread

The holy trinity of cajun cooking is onion, green bell pepper and celery. We've incorporated the holy trinity of cajun ingredients into this delicious and easy to make corn bread. For quicker preparation, you may be able to find the onion, green bell pepper and celery already cut and bagged in your grocery freezer section.


  • 2 tbsp butter or bacon drippings
  • 1/2 cup onion diced
  • 1/2 cup green bell pepper, chopped
  • 1/2 cup celery
  • 1 cup all-purpose flour
  • 2 tsp sugar
  • 2 tsp Rumford Baking Powder
  • 3/4 cup yellow corn meal
  • 1 tsp salt
  • 1 cup milk
  • 2 tbsp vegetable oil
  • 1 egg slightly beaten


Heat bacon drippings using a 10-inch cast-iron skillet over medium-high heat. Saute onions, green pepper and celery for 1-2 minutes or until vegetables are crisp-tender; set aside. Combine cornmeal, Rumford Baking Powder, sugar and salt in a large bowl; make a well in center of mixture. Combine reserved vegetables, milk, oil and eggs; stir well. Add to dry ingredients, stirring just until moistened. Spoon batter into pre-heated skillet. Bake at 425 degrees F for 20 minutes or until lightly browned.
