Key Lime Bars

Baking these Key Lime Bars is easy and you will have the flavor of the classic pie in a bar form. They are perfect for winter entertaining and make a refreshing dessert.


  • 2 1/4 cups all-purpose flour divided
  • 1/2 cup powdered sugar plus additional for garnish
  • 1 cup butter melted
  • 4 eggs beaten
  • 2 cups sugar
  • 1/2 tsp Clabber Girl Baking Powder
  • 1/3 cup Key lime juice


Preheat oven to 350 degrees F. Combine 2 c. flour, 1/2 c. confectioners' sugar, and butter, mixing well. Press mixture into a 13 X 9-inch baking dish. Bake at 350 degrees F for 20 minutes.

In a medium mixing bowl combine eggs, sugar, and Key lime juice beating well. Sift together 1/4 c. flour and Clabber Girl Baking Powder. Stir into egg mixture. Pour over baked crust. Bake for 22 to 25 minutes, until lightly browned, and set. To garnish, sprinkle bars with confectioners' sugar, if desired.

Yields 2 dozen bars.
