Lemon Drop Cookies

These cookies are bursting with lemon flavor-you actually bake them with lemon zest and use frozen lemonade concentrate as your liquid.


  • 1 c. butter or margarine
  • 1/2 c. sugar
  • 1 egg
  • 1/3 c. lemonade concentrate
  • 1 Tbsp. lemon zest
  • 4 c. all-purpose flour
  • 1 tsp. Clabber Girl Baking Powder
  • 1 tsp. Clabber Girl Baking Soda
  • 1/2 c. buttermilk
  • Cookie Topping for Lemon Drop Cookies
    • 1/2 tsp. ground ginger
    • 3 Tbsp. sugar
    • 1/2 tsp. ground nutmeg (to taste)


Preheat oven to 375 degrees F. and grease 2 baking sheets.

Combine margarine and sugar in a small bowl. Beat margarine and sugar until fluffy (about 3-4 minutes) . Add egg, lemon zest and lemonade concentrate. In a separate bowl, combine flour, Clabber Girl Baking Powder, Clabber Girl Baking Soda. Add to lemonade mixture alternately with the buttermilk. Beat until thoroughly combined. Mix together the 3 tablespoons sugar, ginger and nutmeg. Set aside.

Drop by teaspoonfuls onto ungreased cookie sheets. Flatten cookies slightly with bottom of a glass that has been dipped in the sugar/spice mixture. Bake at 375 degrees F. for 10 to 12 minutes. Makes approximately 5 dozen cookies.
