Low Fat Mashed Potatoes Easy to Make For Holidays

A teaspoon of baking powder will add lightness and volume to these mashed potatoes! Once potatoes have been mashed and blended, continue to blend while adding the baking powder. After it has been thoroughly blended, just let sit for a few minutes and serve.


  • 2 lbs potatoes preferably Yukon Gold
  • 3/4 cup skim milk
  • 2 tbsp olive oil
  • 3/4 tsp salt
  • 1/8 tsp Black Pepper
  • 1 tsp Clabber Girl Baking Powder


Peel and cut potatoes into 1-inch pieces. In a 4-quart saucepan, combine potatoes and enough water to cover; heat to boiling over high heat. Reduce heat; cover and simmer until tender, about 15 minutes. Drain.

Warm the milk up slightly in the microwave. Return potatoes to saucepan and mash potatoes with baking powder, milk, oil, salt and pepper until smooth and well blended. Makes 4 servings
