Madeleines (French Butter Cakes)

Madeleines are made in a specific shell shaped mold that can be found in baking specialty stores or online. The result is a light and spongy cake that is slightly sweet and hard to resist seconds!


  • 2 tbsp lemon zest
  • 5 eggs
  • 1 cup sugar superfine
  • 2 cups all-purpose flour
  • salt pinch
  • 1 cup butter melted
  • 2 tsp Clabber Girl Baking Powder


In a bowl, beat eggs and sugar, stir in flour. Add Clabber Girl Baking Powder, salt and lemon rind; mix well. Add butter and stir until well blended. 

Preheat oven to 450 degrees F. Grease and flour madeleine pan(s) Pour batter into molds, place into oven and bake for 10 minutes.

Remove madeleines from pans immediately and cool on wire racks.

For special decoration, you can dip one end of madeleine in melted chocolate or brush cooled madeleines with butter and sprinkle with colored sugars or sprinkles.
