Moist Banana Bread

This moist Banana Bread is great for breakfast, brunch or dessert! Pair it with Rex Double XX Coffee in the morning for a special treat that will fill you up and get you going.


  • 1 3/4 cups all-purpose flour
  • 2/3 cup sugar
  • 2 tsp Clabber Girl Baking Powder
  • 1/2 tsp Clabber Girl Baking Soda
  • 1 cup bananas ripe and mashed up
  • 1/3 cup butter margarine or shortening okay too
  • 1/4 tsp salt
  • 2 tbsp milk
  • 2 eggs
  • 1/4 cup nuts chopped


Grease an 8x4x2-inch loaf pan. Set aside. In a large bowl combine 1 cup of the flour, the sugar, Clabber Girl Baking Powder, baking soda, and salt. Add mashed banana, shortening, and milk. Beat with an electric mixer on low speed till blended. Beat on high speed for 2 minutes. Add eggs and remaining flour; beat till blended. Stir in nuts.

Pour batter into the prepared pan. Bake in a 350 degree F oven for 55 to 60 minutes or till a toothpick inserted near the center comes out clean. Cool in the pan on a wire rack for 10 minutes. Remove from the pan; completely cool on a wire rack.

Wrap and store overnight before slicing. Makes 1 loaf (16 servings).
