Oat Muffin Surprises

There are really two surprises in these humble looking oat muffins: cream cheese filling and a mix of your favorite dried fruits! Apricots are really good in these, just make sure you shop them up finely.


  • 3 oz cream cheese
  • 1 egg yolk
  • 1 1/4 cups all-purpose flour
  • 1/4 cup brown sugar packed
  • 1 tbsp Clabber Girl Baking Powder
  • 1/2 cup quick cooking rolled oats
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 egg beaten
  • 3/4 cup milk
  • 3 tbsp cooking oil
  • 1/2 cup dried cranberries or other dried fruits


For cream cheese filling, in a small mixing bowl combine cream cheese and egg yolk. Beat with an electric mixer on medium speed till combined. Set aside. Grease ten 2 1/2-inch muffin cups or line with paper bake cups. Set aside.

In a medium mixing bowl combine flour, oats, brown sugar, Clabber Girl Baking Powder, cinnamon, and salt. Make a well in the center.

In a small mixing bowl combine egg, milk, and cooking oil. Add to flour mixture all at once. Stir just till moistened (batter should be lumpy). Gently fold in fruit bits. Spoon half of the batter into prepared muffin cups. Spoon about 1/2 tablespoon of the cream cheese filling into center of each cup. Spoon remaining batter into cups, filling cups 3/4 full. If desired, sprinkle tops with sugar.

Bake in a 400 degrees F oven for 15 to 18 minutes or till golden. Remove from pans; cool slightly on a wire rack. Serve Warm. Makes 10.
