Eggs Benedict over Waffles

Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 tsp Clabber Girl Baking Powder
  • 1 tbsp sugar
  • 2 eggs
  • 2 cups milk
  • 4 tbsp vegetable oil
  • 3 tbsp chives chopped
  • pepper to taste
  • 8 slices bacon
  • 8 eggs poached
  • Hollandaise Sauce
    • 4 egg yolk
    • 2 tbsp lemon juice
    • 1 tbsp water
    • 1/4 tsp cayenne
    • 1/4 tsp pepper
    • 1 cup butter melted
    • 1/4 tsp salt
  • green onions garnish
  • sour cream garnish

Instructions

Preheat a waffle maker according to the manufacturer's instructions. In a bowl, mix the flour, salt, Clabber Girl Baking Powder and sugar. In another bowl, mix the eggs, butter and milk. Add the egg mixture to the flour mixture and stir until combined. Add chives and pepper.

Cook the waffles according to the manufacturer's instructions until brown and crisp. To assemble, place each waffle on a plate. Top with 1 slice Canadian bacon, 1 poached egg and 2 tablespoons hollandaise sauce. Garnish with green onions and sour cream. Serves 8.
