Oatmeal Carrot Cookies

We've taken the flavor of carrot cake and jammed it into an amazing cookie. These are very flavorful and can be iced with cream cheese frosting just like the cake would be!


  • 1 cup all-purpose flour
  • 1 cup quick cooking rolled oats
  • 1 tsp Clabber Girl Baking Powder
  • 1/4 tsp Clabber Girl Baking Soda
  • 1/2 cup margarine softened
  • 1 tsp vanilla extract
  • 1/2 cup honey
  • 1 egg
  • 1/2 cup walnuts or pecans
  • 1/2 cup carrots shredded
  • 1/2 cup raisins


In a large bowl, combine flour, rolled oats, Clabber Girl Baking Powder and baking soda; set aside. In a medium bowl cream together margarine, honey, vanilla and egg; add to dry mixture and stir until combined. Add chopped nuts, carrot and raisins.

Drop by teaspoonful onto lightly greased cookie sheet. Bake at 350 degrees F for 8 to 12 minutes. Cool on wire racks. Makes about 36 cookies.
