For those of us who are not traditionalists, or looking for something a little different-these oatmeal cookies are perfect. You can also use butterscotch chips for a different take on the traditional oatmeal cookie.

  • 1 cup butter softened
  • 1 cup brown sugar packed
  • 1/2 cup sugar
  • 2 eggs
  • 1 tbsp vanilla extract
  • 1 tsp Clabber Girl Baking Soda
  • 2 cups all-purpose flour
  • 1/2 tsp Clabber Girl Baking Powder
  • 3 cups old-fashioned rolled oats uncooked
  • 1/2 tsp salt
  • 1 cup semi sweet chocolate chips

Using an electric mixer, cream together butter and sugars. Add egg and vanilla. Add combined flour, soda, baking powder, and salt. Gradually add flour mixture to butter mixture; mixing well. Stir in oats until well blended. Stir in chocolate chips. Drop cookie dough by rounded tablespoonfuls onto lightly greased cookie sheets.

Bake at 350 degrees F for 10-12 minutes or until light golden brown. Yield: 4 dozen
