Pumpkin and Spice Bread or Muffins

This recipe can be made into a quick bread or muffins-I prefer the muffins since they are easier to freeze if you don't plan on eating all of them at once. You may substitue pumpkin pie spice instead of using the individual spices, use 1 3/4 tsp. You can use any combination of nuts and raisins that total 1 cup.


  • 3 cups all-purpose flour
  • 1 tsp salt
  • 2 tbsp Clabber Girl Baking Powder
  • 2 tbsp Clabber Girl Baking Soda
  • 1 tsp ginger
  • 1/2 tsp cloves ground
  • 2 cups sugar
  • 1/4 tsp Mace (Spice)
  • 1 1/2 cups vegetable oil
  • 2 cups pumpkin
  • 4 eggs beaten
  • 1/2 cup nuts optional
  • 1/2 cup raisins optional


Combine flour and seasoning in a bowl. In a separate bowl blend sugar and oil, stir in eggs; add pumpkin. Mix dry ingredients into pumpkin mix. Add raisins and nuts if using them.

Pour batter into loaf pans or muffin tins and bake at 350 degrees F. For bread, bake approximately 45-50 minutes, or until toothpick inserted in center comes out clean. Muffins - 30 minutes, or until muffins spring back when pressed lightly. Makes 24 muffins.
