Sweet Cornbread

Ingredients

  • 1 1/2 cup all-purpose flour
  • 1/2 cup cornmeal
  • 2/3 cup sugar
  • 1/2 tsp salt
  • 1/2 tsp Clabber Girl Baking Soda
  • 1 tsp Clabber Girl Baking Powder
  • 1/3 cup olive oil extra virgin
  • 2 eggs slightly beaten
  • 1 cup buttermilk
  • 1/2 cup milk
  • 3 tbsp butter melted

Instructions

Preheat oven to 350 degrees F. Mix dry ingredients thoroughly.

In separate bowl, mix liquids. Pour liquids into dry mixture and mix just until moistened but thoroughly mixed (with no lumps or dry spots).

Pour into greased 8 x 8 inch baking dish. Bake 30-35 minutes or until toothpick inserted into middle comes out clean.

Makes 9 pieces.
