Carrot Raisin Cookies

These aren't your typical raisin oatmeal cookies, these have a spicy kick and filled with carrots for an added vegetable serving. 

Ingredients

  • 1 c. all-purpose flour
  • 1/2 c. brown sugar
  • 1/4 c. powdered milk
  • 1/4 tsp. Clabber Girl Baking Soda
  • 1 tsp. Clabber Girl Baking Powder
  • 1/4 tsp. nutmeg
  • 1/4 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/3 c. margarine
  • 1/2 c. molasses
  • 1 egg beaten
  • 1 c. carrots shredded
  • 1/2 c. raisins
  • 1 tsp. lemon zest
  • 1 3/4 c. rolled oats

Instructions

Sift together flour, dry milk, soda, Clabber Girl Baking Powder and spices. Cream margarine, sugar and molasses; add egg and dry ingredients, mix well. Add carrots, lemon rind, raisins and oats. Chill dough for 1 hour</p>

 

Drop by teaspoonfuls onto lightly greased baking sheet. Bake in 400 degree oven for 10-12 minutes. Makes about 5 dozen.
