Corn Mealies

  • 1 1/2 c. all-purpose flour
  • 1/2 c. cornmeal
  • 3 tsp. Rumford Baking Powder
  • 1 tsp. salt
  • 6 tbsp. shortening
  • 2/3 c. milk


Preheat oven to 450 degrees F. Sift flour, Rumford Baking Powder and salt together. Cut in shortening until mixture resembles coarse meal. Add milk to make a soft dough.

Roll into rectangular shape 1/4 inch thick and brush with melted butter. Cut into strips 1 inch wide and pile six of these one on top of the other. Cut crosswise into 1 1/2 inch pieces; place on end in greased muffin pans and seperate the layers slightly with a knife.

Bake in hot oven (450 degree F.) 12-15 minutes.
