Banana Crunch Streusel Muffins

This is a morning crowd pleaser when paired with some fruit and yogurt for a quick week day breakfast. The muffins can be made ahead of time and reheated or not depending on the morning's development. If need be muffins are portable and will travel well in the commute.


  • 1 c. all-purpose flour
  • 1/2 c. sugar
  • 2 tsp. Davis Baking Powder
  • 1/2 tsp. salt
  • 1 c. mashed banana
  • 1 lg. egg slightly beaten
  • 1/2 c. milk
  • 1/4 c. vegetable oil
  • 1 tsp. vanilla extract
  • 1/2 c. chopped walnuts
  • Banana Crunch Struesel
    • 3 tbsp. brown sugar
    • 2 tsp. cinnamon
    • 1/2 c. chopped walnuts


Preheat oven to 400 degrees F. 

Combine first 4 ingredients in large mixing bowl; make well in center of mixture. Combine banana, egg, milk, oil and vanilla; add mixture to dry ingredients, stirring just until moistened. Spoon into greased muffin pans filling about two-thirds full. Combine Streusel ingredients and sprinkle evenly on tops of muffins. 

Bake in preheated oven for 20 to 25 minutes or until light golden brown. Remove muffins to wire rack; cool completely.

Yields: 1 dozen
