Coffee Drop Cookies

September 29 marks National Coffee Day and we think one of the best ways to celebrate is to make these coffee drop cookies. Along with a warm mug of Rex Coffee, these cookies are fun for sharing with others on this national holiday. Rex Coffee is brewed at Clabber Girl Headquarters located in Terre Haute, Indiana and is available in our online store.


  • 1 c. shortening
  • 2 c. brown sugar
  • 2 eggs
  • 3 c. all-purpose flour sifted
  • 3 tsp. Rumford Baking Powder
  • 2 tsp. cinnamon
  • 1/4 tsp. salt
  • 2 c. raisins or chocolate chips
  • 1 c. Rex Coffee, brewed cold


Cream shortening, add sugar gradually, creaming until light and fluffy.

Add eggs, one at a time, beating well after each addition.

Sift flour, Rumford Baking Powder, cinnamon and salt together. Add raisins, mix well. Add to creamed mixture alternately with the coffee, beating until smooth.

Drop by teaspoonfuls on a greased baking sheet and bake in a moderate oven (375 degrees F.) 12-15 minutes.

Makes 6 dozen cookies.
