This warm and simple apple bread comes from the 2002 Louisiana State Fair. It's a good thing the recipe makes two loaves, you'll want to eat one right out of the oven and save the rest for breakfast tomorrow.

  • 2 c. sugar
  • 3/4 c. shortening
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1/4 tsp. nutmeg
  • 3 c. all-purpose flour
  • 3 apples cored and coarsely chopped
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • 1 tsp. Clabber Girl Baking Powder

Preheat oven to 350 degrees F. Lightly grease and flour two 8x4-inch loaf pans; set aside.

In a large bowl cream together shortening and sugar. Add eggs one at a time and mix well. Add vanilla. In a separate bowl combine flour, salt and Clabber Girl Baking Powder. Add the chopped apples to the flour mixture and toss gently. Pour into creamed mixture and stir until combined.

Pour into two prepared (greased and floured) 8x4-inch loaf pans. Bake at 350 degrees F for one hour or until loaves test done. (A toothpick inserted in center comes out clean.)
