This cake is very easy to make and only requires you to get one bowl dirty while mixing the ingredients.

  • 2 c. cake flour sifted
  • 1 1/2 c. sugar
  • 1 tsp. salt
  • 1 1/2 tsp. Rumford Baking Powder
  • 1/2 c. vegetable shortening
  • 1 c. milk less 2 tbsp.
  • 1 1/2 tsp. vanilla
  • 2 lg. eggs beaten

Note: if all-purpose flour is used instead of cake flour, reduce flour 2 tablespoons

Prepare two 8-inch round baking pans by spraying with cooking spray or grease with shortening and dust with flour to prevent sticking. Preheat oven to 375 degrees F.

Sift flour, sugar, Rumford Baking Powder and salt into large mixing bowl. Drop in shortening, add 2/3 of the milk and vanilla; beat for 2 minutes by the clock. Scrape bowl and spoon often during entire mixing. Add eggs and remainder of milk; beat two minutes longer.

Pour batter into two layer pans and bake in moderately hot oven (375° F) for 25-30 minutes.

Frost with your favorite frosting and decorate as desired.
