Cranberry Sweet Potato Bread

Ingredients

  • 1 1/2 c sugar
  • 1/2 c. oil
  • 2 eggs
  • 1/3 c. water
  • 1 tsp. vanilla extract
  • 1 3/4 c. all-purpose flour
  • 1 c. sweet potato baked and mashed
  • 1 tsp. nutmeg
  • 1 tsp. Clabber Girl Baking Powder
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/4 tsp. Clabber Girl Baking Soda
  • 1/2 c. cranberries
  • 1/2 c. pecans chopped

Instructions

Preheat oven to 350 degrees F. and grease and flour one 9x5-inch pan or two 2# coffee cans.

In a large bowl combine sugar, oil, eggs, vanilla and water. Beat just till mixed. In a medium bowl combine dry ingredients then add to first mixture. Stir in sweet potatoes then nuts and cranberries. Spoon in mixture to pan(s) and bake at 350 degrees F. for 1 hour. Remove from pan and let cool on wire rack.

Makes 1 loaf OR two 2-lb. coffee cans.
