Easy One Bowl Blackberry Oatmeal Bars

You can use other flavors of jam or preserves to fill this easy one-bowl bar. I prefer to use seedless varieties, but you can use regular if it's unavailable. You also don't have to worry about having the perfect crust with this one. Just make sure the bottom is about the same thickness, 1/4-inch, and not too thick.


  • 2 c. all-purpose flour
  • 1 1/2 tsp. Clabber Girl Baking Powder
  • 1 c. quick cooking rolled oats
  • 3/4 c. brown sugar
  • 1/4 tsp. cinnamon
  • 12 oz. blackberry jam
  • 3/4 c. butter softened


Heat oven to 400 degrees F. Grease 9x9x2-inch baking dish; set aside. Combine flour, Clabber Girl Baking Powder, oats and brown sugar in a large bowl. Cut in butter until mixture is coarsely crumbled. Work the dough with your hands until it just holds together. Press half the baking mixture into pan. Spread jam over batter, leaving a gap around the edges. Press remaining baking mixture into fruit, covering completely. Spray top layer with cooking spray. Bake 30 minutes or until golden brown.

Cut into 24 bars.
