Rumford Chocolate Chunk Cookies

You can include any type of nut and chocolate chip you'd like in these cookies. You could also use a bar of chocolate and cut it into chunks as the name of the recipe implies.


  • 1 c. shortening
  • 1 c. brown sugar
  • 2 c. all-purpose flour sifted
  • 2 tsp. Rumford Baking Powder
  • 1/2 tsp. salt
  • 1/2 c. milk
  • 1 c. semi sweet chocolate chips
  • 1 tsp. vanilla extract
  • 1/2 c. nuts


Preheat oven to 375 degrees F. and grease baking sheets.

Cream shortening, add sugar gradually, beating until light and fluffy. Add egg and beat well.

Sift flour, Rumford Baking Powder and salt together and add alternately with milk to first mixture. Add vanilla and blend well. Fold in chocolate and nuts and stir until well mixed.

Drop by teaspoonfuls on greased baking sheet, flatten slightly with spatula and bake in moderate oven (375 degrees F.) 15-20 minutes.

Makes 4 dozen cookies.
