Honey Lemon Cupcakes

Get rid of those pre-made cake mixes! Our honey lemon cupcakes with cream cheese frosting are easy to make and do not require strange ingredients you have never heard of. These sweet, dainty cupcakes are perfect for a birthday party or any type of gathering. Impress your friends and family with our simply scrumptious recipe!


  • 1/4 c. Sue Bee® Honey
  • 1/2 c. butter softened
  • 3/4 c. sugar
  • 2 eggs
  • 1 1/2 c. all-purpose flour
  • 1 tsp. Clabber Girl Baking Powder
  • 1/2 c. milk
  • 1 tsp. salt
  • 1 tsp. vanilla extract
  • 1 tbsp. lemon juice
  • Frosting
    • 1 1/2 c. Sifted Powdered Sugar
    • 1/2 c. butter softened
    • 1 tsp. grated orange peel
    • 1 tbsp. orange juice no pulp
  • 1/3 c. Sue Bee® Honey
  • 8 oz. cream cheese room temperature
  • 1/4 c. butter room temperature
  • 3-4 c. powdered sugar


  1. Heat oven to 350 degrees F and line a muffin tin with baking cups.
  2. Using an electric mixer, cream together butter and sugar on medium-high speed for about 2 minutes.
  3. Add eggs, one at a time, and mix until evenly combined.
  4. In a separate bowl, whisk flour, baking powder and salt.
  5. In a smaller bowl, combine milk, honey, lemon juice and vanilla.
  6. Add half of the flour mixture to the butter mixture, beating until just combined. Add in the milk mixture, then add the remaining flour mixture, mixing until all ingredients are evenly combined.
  7. Fill baking cups 2/3 of the way full.
  8. Bake for 18-20 minutes.
  9. Using an electric mixer, beat the cream cheese, butter and honey until fluffy.
  10. Gradually add in powdered sugar until you reach your desired consistency.
