Honey Apple Pancakes

You can also add diced apples into these pancakes if they are in season. Just cut up your favorite apple into bite sizes pieces, and add up to 1 c. of fresh fruit to the batter. Fold in the apples carefully, don't overmix. Granny smith and Jonagold apples would be perfect for a fall morning or easy dinner meal.


  • 1 1/4 c. all-purpose flour
  • 2 tsp. Clabber Girl Baking Powder
  • 1/4 tsp. salt
  • 1/8 tsp. Clabber Girl Baking Soda
  • 1/4 tsp. apple pie spice
  • 1 egg beaten
  • 3/4 c. apple juice
  • 2 tbsp. honey
  • 1 tbsp. cooking oil


In a medium mixing bowl stir together flour, Clabber Girl Baking Powder, salt, apple pie spice, and baking soda. In a small bowl stir together egg, apple juice, honey, and oil; add to flour mixture all at once. Stir just till blended but still slightly lumpy.

For each pancake, pour about 1/4 cup batter onto a hot, lightly greased griddle or heavy skillet. Cook till pancakes are golden brown, turning to cook second sides when pancakes have bubbly surfaces and slightly dry edges. Makes about eight 4-inch pancakes.
