Pumpkin Cookies

Advertised as Halloween Pumpkin Cookies in 1958, these easy drop cookies are perfect for fall!


  • 1/2 c. canned pumpkin
  • 1 1/2 tsp. pumpkin pie spice
  • 1 1/4 c. all-purpose flour
  • 1 1/2 tsp. Clabber Girl Baking Powder
  • 1/2 tsp. salt
  • 3/4 c. raisins
  • 1/2 c. walnuts chopped
  • 2/3 c. sugar
  • 1/2 c. shortening
  • 1 tsp. Orange Extract
  • 1 egg


Preheat oven to 375 degrees F.

In a small bowl combine pumpkin and spice; set aside.  In a large bowl; combine flour, baking powder and salt.  Stir in raisins and nut; set aside.  

Using a stand mixing fitted with a paddle attachment or hand mixer and large bowl, cream together shortening and sugar.  Add extract and egg and mix.  Blend in pumpkin mixture.  Add flour mixture and mix until well blended.4

Drop by the spoonful onto a parchment lined cookie sheet, gently press to make cookie about 1 ½ inch in diameter.  Bake at 375 degrees F for about 15 minutes.  Remove cookies from sheets immediately and place on cooling racks to cool.  Frost or decorate as desired. Makes 4 dozen cookies.
