fresh herbs, minced - rosemary and thyme work well
In a saucepan, whisk together 1/4 cup hot stock and the corn starch. Add the remaining stock and heat over medium heat until mixture thickens.
Serve in gravy bowl. Makes 2 cups gravy.
To make your own turkey stock:
Reserve turkey neck, heart, and gizzards (do not include the liver). Combine these parts with 5 c. water, 2 c. apple cider, 1 diced celery stalk, 1 diced apple, 1 diced onion and 1 bay leaf. Simmer 2 hours, adding more water if the liquid reduces to less than 5 cups. Strain through a sieve set over a bowl, and discard the solids. The neckmeat can be added to the gravy or stuffing, if desired.
