Creamed Spinach or Kale Recipe for the Holidays

  • 1/2 c. butter
  • 4 tbsp. Clabber Girl Cornstarch
  • 1/2 c. onion finely diced
  • 1/2 tsp. garlic powder
  • 2 c. whole milk
  • 1/8 tsp. salt
  • 1/8 tsp. Black Pepper
  • 1/8 tsp. nutmeg
  • 3 tbsp. butter
  • 24 oz. spinach preferably fresh


Melt 1 stick of butter in a 3 quart sauce pan. Mix the milk and corn starch together and add to pot. Add onion and garlic powder and stir until combined. Keep stirring the mixture until it thickens, approximately 5 minutes.

In a separate sauce pan, melt 3 tbsp. and then add in the spinach in increments. Cook the spinach until it is wilted but not soggy. 

Season the cream sauce with salt, pepper, and nutmeg. Add spinach to the cream sauce, stirring gently to combine.
