Thumbprint Cookies

These thumbprints are famous in our Bake Shop! We top them with different colors of buttercream frosting to match the season or holiday. The cookies are just the right amount of salty sweet and coated with pecans for added crunch.

Directions

Preheat oven to 350° F. Line baking sheet with parchment paper, then set aside.

In a medium bowl, cream together softened butter, brown sugar, egg yolk and vanilla. In a separate bowl, sift flour and salt, add to butter mixture, mix well.

Shape dough into 1-inch size dough balls. You may roll them by hand or use a small ice cream scoop. Roll them in finely chopped pecans.

Place on a baking sheet about 2-inches apart. Press thumb firmly on top of each cookie. Bake for 10-14 minutes. When cookies are cool, top with buttercream icing or your favorite fruit preserves.
